Thresh and grind the wheat berries, then gently sift the flour if you prefer a lighter bread, reserving the extra germ to add to muffins or pancakes. This is good in your favorite bread recipes. Also, sprout a handful of kernels in a jar (this takes a couple of days, depending on the warmth, etc.) and add these to your bread or bagels–simply delicious! Hard Red Winter wheat is also good for making wheat-berry salads by cooking the grain whole (we like to soak it overnight in water with a little whey first) as you would cook pearled barley, then adding chopped Italian Plain-leaf parsley, fresh thyme, Black cherry tomatoes, chopped Marketmore 86 cukes, finely chopped Rossa di Milano onions, and some chopped dried apricots, lemon juice, olive oil and a little herb salt.
