Certified Biodynamic and Organic(C. pepo) Varietal improvement in 2009. 7-9×3 in. Oblong cylindrical fruit with cream skin, striped and speckled with dark green. Sweet, tender, golden-orange flesh reminiscent of sweet potato. Good for baking and stuffing. No curing needed. Short term storage. A favorite at farmer’s markets and CSA’s. Very sweet and melting flesh, we like these cut in half and baked, peeled chopped and roasted with sage, onion, olive oil and dried cranberries, in miso soup instead of tofu, or in many other favorite squash recipes.
